I love sauerkraut. I remember that my grandma would make it in the summers and when they traveled we got to babysit it! It was made in a large earthen ware crock and in August in a Boise garage is was pretty stinky. But oh how that sauerkraut tasted. I plan to do canning this summer, maybe I should try my hand at some natural fermenting. -S
PS – when are we getting a post on that? If I know you it is in the works.

Ah but natural fermenting isn’t so smelly because it doesn’t use vinegar. And you don’t have to can it.
